Around here, we have been trying to eat a little healthier. A couple of weeks ago I made cucumber soup.
Fresh parsley.
I love green onions.
Here it is cooking on the stove. It is actually prettier after it has been pureed in the blender, but I forgot to take a photo of that .
Stuffed Jalapeno’s from the Weight watcher website. I added some bacon pieces for added flavor.
And Butch fired them up on the grill. Yum. So so tasty…

This weekend I made salsa. My tomatoes are a bit stunted from the rabbits eating at them when they were young, so I’m still waiting for them. So I had to buy some tomatoes instead. (They are still better than canned tomatoes ).
And Saturday night we had scallops with tequila-lime butter. Yum…
I should also mention that the kids aren’t really “feeling” the eating healthy thing. Elizabeth dislikes seafood. And William only likes breaded shrimp. But that just means that we are getting more of it for us .

Good! Maybe it will get them out of the house faster! ;) Those stuffed jalapeños look wonderful! I'll have to find the recipe on the website. I miss you guys!! Happy eating!
